Britse sterrenchef wil heropening niet riskeren

In België is de horeca ondertussen al drie weken open. In het Verenigd Koninkrijk heropent de horeca vandaag pas. Niet iedereen is even enthousiast. “Nog een paar weken zonder reservaties is eng, maar we zouden een te groot risico nemen door zo snel te heropenen”, zegt sterrenchef Sat Bains. 

Het Verenigd Koninkrijk was een van de hardst getroffen landen tijdens de coronacrisis. Daarom is niet iedereen even gerust in een heropstart van de horeca op 4 juli. Velen vrezen dat deze beslissing er te snel komt en zijn bang voor een tweede golf.

Voorzichtigheid van belang

Ondanks de beperkte capaciteit van de restaurants, maken chefs zoals Sat Bains (van het gelijknamige tweesterrenrestaurant in Nottingham) zich zorgen over wat een te vroege heropening met zich mee zal brengen. Hierdoor een tweede golf veroorzaken is het volgens hem niet waard. “Alles hangt af van die tweede golf.”, zei hij tegen BigHospitality. “Het is een stresserende periode. Ik wil zeker niet negatief klinken, maar ik wil erg voorzichtig zijn zodat we niet onmiddellijk weer moeten sluiten. Deze periode geeft ons de mogelijkheid om na te denken over wat we kunnen verbeteren aan de restaurantbeleving.”

Een opening in augustus of september zal er waarschijnlijk wel inzitten voor Bains, maar hij wil flexibel blijven en volgt de situatie nauw op.
